The analysis of literature sources on the use of enzymes, enzyme preparations and immobilized enzymes, allowed to determine which enzymes are used in certain sectors of the food industry. It is established that the condition for the use of enzymes in the food industry is the availability, low cost and inertia relative to the target product.
