RESEARCH OF THE ANTIOXIDANT ACTIVITY AND THE CONTENT OF BIOLOGICALLY ACTIVE SUBSTANCES IN PERSEA AMERICANA MILL SEED EXTRACTS

 Experimental detection and determination of the concentration of several groups of biologically active substances in aqueous-ethanolic extracts of avocado seeds (Persea americana Mill.) reliably confirmed the presence of phenols (up to 1.19 mg/ml), flavonoids, and amino acids. Extracts of dried avocado seeds, prepared using 40% ethanol as an extractant, demonstrated the highest antioxidant activity. Comparative determination of the level of antioxidant effect of the analyzed extracts established the effectiveness of reducing lipid peroxidation to 55.7 % and protein oxidative modification to 26.9 % relative to the control sample.
