Іmpact of nitrogen sources, salts, and В-group vitamins on the biosynthesis of lactic acid

The study established a direct correlation between the concentration of corn steep liquor in the fermentation medium and the amount of lactic acid, as well as the biochemical requirements of Lactobacillus delbrueckii UY-2/13 for nitrogen-containing components of corn steep liquor. In particular, it was found that at a corn steep liquor concentration of 160 g/dm³, the maximum lactic acid concentration (101.37 g/dm³) was achieved with a yield of 94.39%.
