У статті наведено результати дослідження водних і водно-етанольних екстрактів, отриманих з клітинної стінки вівсяних і пшеничних висівок, на наявність у них фенольних сполук, флавоноїдів і амінокислот. Загальний вміст фенолів оцінювали спектрофотометрично за методом Фоліна-Чокальтеу, а загальний вміст флавоноїдів визначали колориметричним аналізом з хлоридом алюмінію. У зразках методом тонкошарової хроматографії ідентифіковано галову кислоту, ферулову кислоту та кверцетин. Антиоксидантну активність екстрактів оцінювали з використанням гепатоцитів печінки щурів в умовах вільнорадикального окислення in vitro. Результати показали, що водно-етанольні екстракти пшеничних і вівсяних висівок істотно не знижують перекисне окислення ліпідів та окисну модифікацію протеїнів. Однак екстракти пшеничних висівок показали вищу антиоксидантну активність, ніж екстракти вівсяних висівок.
